A star is considered as a luminous ball of gas held by its own gravity. They can come in a variety of sizes, temperatures, luminosities, and colors. Mostly red, orange, yellow, light-yellow, white, light blue, and a bright blue.
Stars in Solar System Exploration 2 are usually bigger than most of the planets in their system, yet have less gravity in order to prevent players from being sucked into them if they reach the closest planets to them. Similar to gas giants, stars have no solid surfaces, and can easily burn (and kill) players if they get too close to them.
Only 2 stars can be found in Solar System Exploration 2. Proxima Centauri and the Sun. 2 more were originally planned for released, although due to development previously ending, the two other planned stars never got to released. T-Cygnus and TRAPPIST-1, the latter of which has the least known information. As of recent, the game has switched developers, meaning that T-Cygnus and potentially TRAPPIST-1 (if it was even made) could see an official release.
